3 1⁄2 CUP (875 ML) MUSTARD POWDER
1 1/3 CUP (315 ML) WHEY
14 TBS (210 ML) WATER
2 TBS (15 ML) SEA SALT
In a bowl, mix together all the ingredients. Transfer the mixture into your Mortier Pilon fermentation jar. Make sure to leave 3⁄4 of an inch (2 centimeters) of headspace between the mixture and the rim of the jar.
Let the mixture ferment at room temperature, covered, for 3 days. Once the desired level of fermentation has been reached, refrigerate or serve.
