PROBIOTIC SPARKLING LEMONADE
This next-generation lemonade is both refreshing and packed with probiotics—just what your body needs on long, hot summer afternoons.
1 TSP (5 ML) Cane sugar
1 TSP (5 ML) Whey
4 CUPS (1 L) Water
Juice the lemons. Transfer the juice to your Mortier Pilon fermentation jar. Add the sugar, whey, and a small amount of water. Mix.
Add the rest of the water. Make sure to leave 2 inches (5 centimeters) of headspace between the mixture and the rim of the jar.
Let the mixture ferment at room temperature, covered, for 5 days. Refrigerate or serve.
